Knowledge is Plentiful Even Where Resources Are Scarce

Russell Cave Elementary School in Lexington KY sits in one of the city’s 30 identified food desserts. The school is capped at 300 students due to its infrastructures restraints and pulls mainly from the migrant farm laboring families. 79% of the students qualify for free or reduced lunch. With these demographics in mind the schools Family Resource Coordinator reached out to the Nutrition Education Program to collaborate on classes to educate the K-2 students on eating healthy. Utilizing the LEAP (Literacy, Eating and Activity for Preschoolers) curriculum through 9 sessions over the course of 18 weeks, the children improved their nutritional knowledge and were able to more readily identify individual food groups, as well as how to differentiate healthy snacks from unhealthy foods. At the end of the series 88% of participants showed an increase in their diet quality according to a national data analysis program.
