Per America’s Health Rankings report by United Health Foundation, 14.7% of Kentucky households struggle with food insecurity. In the same report, only 4.7% of adults are consuming the recommended rate of 2 or more servings of fruits and 3 or more servings of vegetables daily (https://www.americashealthrankings.org/explore/annual/state/KY). In the Kentucky Extension Community Assessment 2019 McCreary County Report, 9.43% of respondents reported the need for better skills for selecting and preparing healthier foods. As evidenced by this data, there exists a need for education on ways to increase fruit and vegetable consumption, as well as education on ways to prepare healthier foods.
Electric pressure cooker Wildcat Taco Soup was a class developed by McCreary County FCS/4H agent in collaboration with the 4H assistant to provide a budget-friendly, quick recipe resource for families seeking ways to increase nutrition value of their meals. The class was produced by McCreary County Family and Consumer Science Extension agent and 4H assistant. The class was presented on the McCreary County Extension Facebook page.
The video had an estimated reach of 436 people with 248 unique video views, and 143 views of greater than 10s. The post engagement was 13 per Facebook analytics with 9 reactions, 1 comment, and 3 shares. The video shared a recipe to increase nutritional value of meals as well as a tutorial on using the electric pressure cooker.
