Hall’s Original Snappy Beer Cheese is recognized nationally as one of the primer Kentucky based food products.  Originally developed in the early 1960s and served in local restaurants the Hall’s product can be purchased at many Kroger and Sam’s Club stores.  As any good entrepreneur knows the key to success is to not stay stagnate but to continue to be innovative and that is why the folks at Hall’s approached the Food Systems Innovation Center (FSIC) for assistance with two new products that they were investigating.  In this case, what they needed was a consumer taste panel to help them to identify the most acceptable version of two new products.  The FSIC recruited over 150 individuals for the study and assisted in the data collection and analysis.  Each participant was to taste 6 products in total and describe the organoleptic attributes of each.  Ultimately the participant were ask which product they preferred which provided the Hall’s development team information on which products should perform best in the marketplace.  This type of research is critical in ensuring that the products that make it to the marketplace will be acceptable to the consumer.
