Food Safety !!

The Pike County Cooperative Extension Service Expanded Food and Nutrition Education Program
partnered with the Pike County Detention Center and WestCare for a sixth year to provide the
Healthy Choices for Every Body curriculum.

The MyPlate curriculum was utilized as residents learned how to prepare fresh, healthy foods using
each of the food groups. They gained skills in meal planning, budgeting for food spending, food
safety, and proper exercise. Family health was emphasized as they learned how to provide healthy
food for children and how exercise will improve the physical and emotional health of the entire family.

Nine clients entered the program with a 100% graduation rate. On average, 86% showed improvement in
food diet quality, such as eating more fruits and vegetables each day and drinking regular soda
less oft   Eighty-two percent showed improvements in physical activity. Sixty-one percent showed
improvements in food safety, including hand washing before food preparation and using a meat
thermometer. Sixty-seven percent showed improvement in food security, while 87% improved on food
resource management, such as meal planning and comparing prices when shopping for food.

Female clients wrote, "I have picked up a lot of useful information and tips, including a cookbook
which I plan to take home to my family." and "This class has brought a lot of things about food
safety to my attention. I have learned to calibrate a meat thermometer and to not thaw food at room
temperature."
