Try It, You May Like It

According to the US Agriculture Department, only 23% of Kentuckians eat the recommended daily

amount of vegetables. The adult Healthy Choices for Every Body curriculum was offered

during National Nutrition Month in which the SNAP-Ed assistant in Boyd County targeted adults and

youth to try new foods. Participants stated they were concerned about changing their eating

habits, Calendars were given to each participant at the first meeting and some of the adults had doubts

if their families would eat the foods after they were prepared.  One participant was convinced

that her family would not like the Autumn Sweet Potato Chili since they did not like sweet potatos. She

made a trial recipe for her family to sample making sure to chop the sweet potatoes in smaller pieces.

This has become their new chili recipe and been requested quite a few times.  She also feels this is a

healthier recipe for her family as they are adding more vegetables into their diets.

During summer youth cooking camps, the Two Bite Club was implemented which encouraged children

to take at least two bites of new foods.  Many children learned that foods that they said they did not

like previously, they would ask their parents to purchase so they could increase the number of

vegetables they liked and would eat at meals.
