Families in the Kitchen – Cook Together Eat Together

Lawrence County Expanded Food Nutrition Education Program (EFNEP) Assistant Senior was selected to participate in the curriculum “Families in the Kitchen - Cook Together Eat Together”. This curriculum was written for limited resource families or caregivers who have youth ages 5-18. The study focused on families (parents and children) learning to cook healthier recipes while spending quality time together. The seven classes consisted of topics including MyPlate, Breakfast, Know the Limits, Planning Meals, Budgeting, Food Safety, and Reading Labels. The participants prepared breakfast, soups, salads, vegetables, one pot meals, and snacks.   Additional topics included grocery shopping on a budget and cooking with a slow cooker with recipes designed for slow cookers. The participants enjoyed cooking frittatas, easy chicken and veggie stir-fry, fresh taco salad, apple crisp, southwestern chicken and rice and slow cooker barbeque chicken. Lawrence County EFNEP Assistant had 3 families complete the program with a total of 9 overall participants. As a result of NEERS reporting: 100% showed improvement in one or more diet quality indicators including 100% had a positive change in fruit and vegetable intake; 100% thaw frozen food at room temperature less often; and 100% drink regular soda less often.
