Planning Unit: 4-H Central Operations

Major Program: Health 4-H Core Curriculum

Plan of Work: Health and Wellness

Outcome: Initial Outcome

This year a 4-H volunteer started an International Cooking Class that was targeted to 14 to 18-year old’s. The youth learned about new cultures, how to prepare a dish by following a recipe, proper kitchen safety, and how to work together as a team. Each class focused on a different country (Mexico, Korea, and Italy were a few). After they finished cooking, they could eat the dish and give feedback on their experience. They were also responsible for cleaning up the kitchen before the left.

The youth enjoyed this class very much, as it provided them with an opportunity to learn about different cultures. They improved their cooking knowledge, as well as their ability to work with others to get a task completed. After each class, they were given the recipes they used to make at home if they wanted. This class will plan to continue to next year.

Situation

Estill County population is approximately 14,000 people with 98.5% identifying themselves as white.

Educational response

Estill County 4-H initiated an International Cooking Class to teach life skills, improve nutrition, and experience foods and customs of different cultures. There were 5 classes with 8 different youth participating in one or more programs.

Target Audience

The International Cooking Classes were offered to youth ages 14 to 18 years old.

Outcomes

The youth worked cooperatively in teams, discussed ingredients and techniques that were new to them and followed oral and written directions to prepare recipes from a variety of counties including Mexico, Korea, and Italy to name a few. They used a variety of measuring tools, demonstrated good food safety and kitchen safety practices as they washed their hands, avoided cross-contamination, and used knives and other cutting tools. The youth sampled and evaluated each of the recipes. They compared similarities between the food they eat at home and the foods that were new to them.

The International Club has provided an opportunity to improve life skills, cognitive development, as well as self-confidence.
