Healthy Meals On A Budget

Limited resources families in Crittenden County have a hard time stretching their food stamps and other income to meet the nutritional needs of their families.  They purchase less healthy food because serving healthy meals and snacks for their family is more expensive.  The Crittenden County Extension Service working through the Expanded Food Nutrition Education Program Assistant Sr. teaches Meal Planning and Food Budgeting and Couponing to help families in Crittenden County make the most of their resources.

Several homemakers have taken the opportunity to take these classes.  One lady told the EFNEP Assistant Sr.  that she had learned how to purchase meat when it was on sale and use some of the recipes provided by the EFNEP Assistant Sr. to make three meals with the one purchase.  She learned to purchase extra milk when it was on sale and freeze the extra so her grandchildren could have all the milk they wanted to drink.  Using coupons helped the homemaker to purchase more with less.  She was so pleased that the classes had made it easier for her to make healthy meals for her family.
