Programming for Limited Resource Youth During the Pandemic

Within the Kentucky Cooperative Extension Nutrition Education Program (NEP), educational program delivery faced numerous challenges during the COVID-19 pandemic. By embracing technology and adapting program materials and delivery methods, opportunities emerged for NEP Extension personnel to thrive.  During the 2020-21 program year, three NEP youth curricula—LEAP…for Health, Professor Popcorn, and Teen Cuisine--were adapted by NEP state staff for use in a virtual setting. Adaptations included, modifications to curriculum content, recording food demonstration videos, and program delivery adaptations. Three virtual trainings were conducted to share the curriculum changes; reaching 478 Extension county staff. Numerous county staff have reported using materials. The materials provided an avenue to successfully collaborate with schools and other partners to reach youth during the pandemic.
