Improved Food Safety Habits Made

Author: Brenda Williamson

Planning Unit: Pulaski County CES

Major Program: Accessing Nutritious Foods (general)

Outcome: Intermediate Outcome

The SNAP-Ed Assistant from the Pulaski County Extension Service went to a Section 8 Housing Unit called Somerset Village Apartments in Somerset Ky. She met with management and offered to hold some nutrition classes in their community room. Meeting dates were scheduled and management sent the information out to their residents. Some of their elderly residents went to the classes and enrolled into the nutrition group. Upon completing the enrollment questionnaire forms the assistant found that 100% of this group thawed their food out at room temperature 60% to 80% of the time.

The assistant met with the Somerset Village Group for several months and taught lessons such as “Keeping Your Foods Safe” from the Healthy Food Choices for Every Body Curriculum provided through the Nutrition Education Program. When the assistant completed the lessons she chose to offer, she had the group fill out an exit questionnaire with the same questions they had answered when they enrolled. The results of the questionnaire showed a 100% improvement! Improved food safety habits were made because they no longer thawed their food at room temperature!
