LaRue County Farmers Market- Increasing Fresh Vegetables in Our Families Diet

LaRue County Kentucky has an obesity rate of 34.7 percent with 16.3 percent being at or below poverty level according to Kentuckyhealthfacts.org with data from Feeding America showing that13.8 percent that are food insecure.

LaRue County Farmers Market operated weekly for 10 weeks. 

LaRue County Extension Service  Expanded Food and Nutrition Program ( EFNEP) Assistant distributed five Chopped Challenge Bags each week during the Farmers Market.

Each bag included Kentucky Proud Plate it Up Recipes and the ingredients needed to make each recipe .

Comments from participants included:

“ The cucumber, corn and bean salsa is easy enough for and eight year old to make with adult supervision” 

“My 7 year old daughter and I made Squash Supreme today! It was delicious!”  

“Our Squash Supreme was absolutely delish! Thanks for the ingredients and the recipe! “ 

By providing recipes and ingredients it was proven that families were spending more time cooking  together and increased consumption of vegetables and fruits which contributes to  improved diet quality  and overall better health in these families.
