Better Nutrition in Difficult Times

Major Program: Accessing Nutritious Foods (general)
Outcome: Long-Term Outcome
With recent events due to COVID-19 one mother lost her job and her financial status changed but she knew that she had to find other resources to provide better nutrition for her children instead of the junk food they were eating so she contacted the Nutrition Education Program Assistant in search of healthy snacks, easy meals and learning activities they could do together. Super Star Chef recipes were shared on making Mini Fruit Squares, and English Muffin Pizzas along with lesson materials on Whole Grains.
LEAP materials were also provided on how dairy foods give them calcium for strong bones and teeth. The children read the story of Rodeo Ron and His Milkshake Cows.
The children were asked, “what food group is milk in?” What fruits could you add to make milkshakes? They answered strawberries, blueberries, banana and yogurt.
They each chose their favorite fruit to make the milkshakes. They did the Milkshake in a Bag using flavored yogurt and almond milk.
When they placed all the ingredients in their bag, they did a physical activity of shaking the bag while dancing to music.
Mom says, “it was hard to get them to drink milk with their meals, but now “they really liked the milkshakes they made.
At least twice a week they ask if they can make the Rodeo Ron Shakes, Mini Fruit Squares and the English Muffin Pizzas.
