Introducing healthy cooking in schools has many benefits: Children may try new and healthy foods. Recent research published in the Journal of the Academy of Nutrition and Dietetics indicates that children engaged in tactile experiences, such as handling foods, have less food neophobia (food fear) and greater acceptance of eating a variety of foods. A kitchen is a learning lab for children that can involve all of their senses. While kneading, tossing, pouring, smelling, cutting, and feeling foods they have fun and learn without being aware of it. Children who cook at home indicate a “sense of accomplishment," self-confidence, and feeling of contributing to their families.  eXtension, Cooking with Kids in Schools: Why It Is Important, February 9, 2017.

4-H Cooking Academy was a six week session with middle schools students focused on advanced food preparation skills.  The club utilized the 4-H Cooking 101 and Teen Cuisine curriculum; involving the Oldham County EFNEP Assistant as a teaching partner.  Recipes were prepared by participants, in addition participants discovered food preparation equipment, knife safety, and measuring skills.   Discussion of eating habits such as reducing fast food consumption and cutting the fat with recipe substitutions were explored and implemented with recipes.  The food label was discussed and the concept of balancing food intake with physical activity level was calculated by each participant.

Participants were provided with take home recipes.Participants indicated they had prepared the recipes independently for their family.  In addition, post survey indicated 100% are washing fruits and vegetables before consuming, 92% participants are confident measuring ingredients and following recipe directions.
