The setting is a small rural school in the hills of eastern KY. Health education is not a regular class at this location. As a result, the youth have limited knowledge about eating nutritious food. Many of these students come from limited resource homes.
The University of Kentucky College of Agriculture Food and Environment Cooperative Extension Service, in conjunction with the Perry County school system, presented the Farm to School program to the youth in Perry County. This program was presented weekly for 6 weeks and a variety of topics which included the five food groups, were covered. This group of youth were very receptive to the program presentation and actually stated that they enjoyed learning about good nutrition. One youth was especially impressed with the lesson on dairy. This is a direct quote from this student, “I’ve cut back on pop (soda) and I even convinced my mom to start buying 1% milk instead of 2% milk!”
