It is much easier to choose convenience foods and ready made meals that take less time to prepare and are seemingly cheaper on the wallet.
In Laurel County Kentucky the local Nutrition Education Program assistant worked with a group of residents all adults with various ages for seven weeks. Each week a different topic and recipe was brought to the participants' attention. Hands-on, interactive recipe preparation, the information publications, as well as recipe-related reinforcement items that could be taken home lead to a 92% improvement in diet quality. More fruits and vegetables were eaten regularly. Families prepared more meals at home. Such behavior changes aren't seen as easy to accomplish but these participants did it. Their overall improved lifestyles had one saying, "I've learned easy isn't always right."
