The Perry County Family and Consumer Sciences agent started off the 2019 year with Calendar Cooking to introduce participants to healthy recipes. The first recipe in the 2019 NEP Nutrition Calendar was Citrus Kale Salad. Eighty percent of the participants had never tasted kale and would never have considered preparing the recipe for their families. After working in groups to prepare the salad, participants then tasted the recipe and discussed the recipe: how it tasted, looked, ease of preparation, whether their family might like it, whether they would prepare it for their family, if there might be modifications to the recipe that would encourage their family to eat the recipe. One participant said, “I tried kale years ago and did not like it then so I was sure that I wouldn’t like it now. This actually tastes good and I am glad that I tried it here because I would never have made this recipe at home.” Those who had never tasted kale said that they liked it as well and that they, too, would never have prepared this recipe at home for their families.
