Data from the Hispanic Community Health Study/Study of Latinos found 16.9% of Hispanic adults to have Type II diabetes compared to 10.2% of non-Hispanics (American Diabetes Association, 2014). At a health fair at a Jefferson County Hispanic –Latino Church, a woman and her son approached the Nutrition Education Program booth with the University of Kentucky Cooperative Extension Service. She received a very detailed explanation about the nutrition education program. She and her son were diabetic and she was amazed when she saw the amount of sugar that many people consume every day and the huge consequences that has for their health. The Nutrition Education Program Assistant invited her to join the nutrition education group at the same church and she joined soon after. In the nutrition education classes, the group learned many new skills: how to prepare healthy meals, how to avoid eating too much by learning portion control skills, how to increase the amount of leafy greens in their diets, how to diminish the amount of sugar by substituting high calorie and sweet drinks with more fruits and vegetables and better ways to control the sodium intake with different low sodium option available in the market.After completing the program, the group showed a lot of progress with an 85% positive change in eating more vegetables and a 77% improvement in eating more fruit. The woman and her son in particular were very interested in all the little changes that could help manage their diabetes symptoms and they continue to attend the nutrition education classes. They are feeling very encouraged to continue everyday doing what is right for their health and well-being.
