Lynn Camp Teen Cuisine

Author: Kellie Miller

Planning Unit: Knox County CES

Major Program: Accessing Nutritious Foods (general)

Outcome: Long-Term Outcome

According to the Centers for Disease Control 15.6% of of adolescents were overweight (> 85th and < 95th percentiles for BMI by age and sex, based on reference data) and 17.6% were obese (< 95th percentile BMI by age and sex, based on reference data). A Community Partner who works for HealthCorps, Inc reached out and asked if we could partner and provide nutrition education at Lynn Camp High School. In order to combat the above statistics we partnered with a teacher and allowed us in to her classroom to teach Teen Cuisine.

The most memorable moment from this class is when all of the participants tasted the Berry Purple Smoothie. As they began to prepare the recipe one could see the participants questioning whether they would like this or not. Many were asking for second and third helpings. To be able to provide these adolescent participants with the tools to eat a healthier breakfast and/or snack was fulfilling.

Upon completing this program families showed changes in the following areas:

  • 10 out of 11 participants improved in vegetable consumption
  • 10 out of 11 participants improved in fruit consumption
  • 10 out of 11 participants improved in milk consumption
  • 10 out of 11 participants improved in grain consumption
  • 10 out of 11 participants improved in how many days the participant was active
  • 10 out of 11 participants improved in washing hands before eating
  • 10 out of 11 participants improved in checking expiration dates
