The Recipe Collector's Club

~~According to the United States Department of Labor, Bureau of Labor Statistics, 63.9% of the residents in Wolfe County, Kentucky are low income families and are the ones who continue to have difficulty finding healthy foods that are affordable. They are afraid to try new healthy recipes for the fear of wasting food, money and their time if they don’t like what they prepare. To address this in Wolfe County, the Nutrition Education Assistant began a program called the Recipe Collectors Club, a hands on club that uses the 2017 Food and Nutrition Calendar provided to the NEP program by the University of Kentucky Cooperative Extension Service and the Healthy Choices for Every Body curriculum.   Each month there is a different recipe and includes tips on other ways to maintain a healthy lifestyle. The program started in January with 12 participants, and each month keeps growing. Participants gather to make the recipe for that month. They learn how to read a recipe, how to follow the recipe, participants make the recipe and then they get to sample it. This is how they decide if they like it or not and if they do they may buy the ingredients and if they don’t they don’t have to worry about wasting any food, money or time. While they are sampling the recipe they are learning about ways to plan meals, how to eat better on a budget, and how to keep their foods safe so they don’t waste.Participants reported preparing the dishes they enjoyed and reported making those recipes again at home. One participant stated, “This is a great opportunity for my family because not only are we on a tight budget and can’t afford to waste money on food but we get to spend quality time together learning at this class and taking what we’ve learned home and spending more time together there as well. My family loves the 10-minute bean soup and it literally takes 10 minutes to make.” Another participant stated “Going home and making the Mac and Cheese Surprise with my kids was great, they helped in the process and were more likely to eat the surprise (summer squash). They loved it!” Even though the Healthy Choices for Every Body curriculum is geared for six weeks the club is ongoing each month.
