Cooking Through the Calendar in 2024!

Outcome: Initial Outcome

According to the CDC and data collected from the 2015 Behavioral Risk Factor Surveillance System, only 9% of adults consumed the recommended amount of vegetables, and only 12% consumed the recommended amount of fruit. Because of barriers such as high cost, lack of availability and access, and perceived lack of ability to prepare and cook, many are going without the essential nutrients they need. 

In order to address those needs and provide continuing education, Lunch and Learn, a community favorite, once again took place every month throughout 2024 in Garrard County!  The University of Kentucky Food and Nutrition Calendar was used to showcase recipes that are low in sodium, added sugars, and saturated fats. Topics covered included trying new healthy recipes, increasing fruit and vegetable consumption, and reading the nutrition facts. There was also a unique portion included in which a different country was showcased each month.  The cuisine and culture was highlighted in a fun way while also emphasizing tips on food safety and nutrition. A day and night session was held each month to accommodate various schedules. A survey was carried out at the end of the year to gather participant feedback. 22 participants took the survey and the results showed the following: 100% of participants reported that Lunch and Learn has inspired them to try new things. 73% of participants reported that they have made some of the recipes at home. 91% of participants reported an increase in fruit and vegetable consumption since starting Lunch and Learn. 86% of participants reported that Lunch and Learn had prompted them to start looking at the nutrition facts label more often. 100% reported that the program had increased their knowledge of other cultures. Lunch and Learn remains a fun and inspiring program that will hopefully evolve and feature new subjects in the future!
