An adult group in Jefferson County participated in the Kentucky Nutrition Education Program through the Jefferson County Cooperative Extension Service. The lesson on My Plate was taught by the Supplemental Nutrition Assistance Program Assistant, the importance of making half your plate fruits and vegetables along with the importance of being Physically active. The clients learned that fruits and vegetables are high in Fiber and Antioxidants as well as Vitamins and Nutrients. An Apple Chicken Salad was prepared and sampled by the participants. The participants mentioned that they ate fast food at least once daily.
Since taking the nutrition classes, they are preparing meals at home using fresh fruits and vegetables. They also reported that they are preparing meals from our recipes handed out at the classes. As a result, of the nutrition classes, their portion sizes have changed and one member has lost 12 lbs. They are no longer eating fast food every day and 3 members from the group graduated and have reported weight loss.
