Adolescents who live in households that struggle to afford food are more likely than others to be overweight. Teens who are "food insecure" - that is, who are regularly unable to get enough to eat due to economic difficulties - reported eating behaviors associated with obesity. (Project EAT from University of Minnesota Medical School 2009). The Gallatin County Extension Service offered several different cooking opportunities throughout the school year. Two cooking clubs were offered after school at the Gallatin County Upper Elementary. They learned the basics of cooking ,which included reading a recipe, trying new foods, and knife skills. At one day camp "Cookies Around the World" , celebrations of  diversity and cultures of the world. This summer, we offered for the first time the Super Star Chef Program. According to the pre/posttest, there were eight (8) self-assessment of learning gains items. These items asked the participants to indicate the extent to which they agreed or disagreed that they learned the concepts described in various statements all the respondents, 11 children, (100%) agreed/strongly agreed that they learned how to wash their hands to remove germs and how germs can be transferred to food.  Also 100 % of the children agreed/strongly agreed that they  learned about the amount of fruits and vegetables they should have on their plate; learned the correct way to hold a knife for cutting; learned how to measure ingredients; and learned how to read recipes. Several of the children that participated have said that they have now tried those recipes at home.
