Every individual, regardless of their physical or mental challenges, deserves the chance to improve their lives through better nutrition. Recently the Nutrition Education Program Senior Assistant in Grayson County, KY., held some nutrition classes at the Grayson County CommuniCare facility; and these classes were a testament to this belief.
The group that was taught was comprised of adults with various disabilities—each one carrying their own set of challenges, yet all eager to learn. The nutrition classes focus’ on many topics, but they also help to foster a sense of accomplishment and self-worth. These individuals were introduced to some easy and practical exercises, food safety practices and they were provided with tools and information to enhance food security.
Some of the students struggled in the beginning to grasp the importance of these classes, but in the end all came to understand and realize the importance and consequences of their actions; and there was a major change that came over this group.
The statistics were clear: there was a 100 percent improvement in physical activity, food safety practices, and food security among the students. But the real victory was in the personal growth each student had achieved.
The Nutrition Education Program Senior Assistant realized early on that this was more than just a nutrition class. It was a journey of self-discovery and empowerment for individuals with disabilities. And their triumph wasn’t just in the numbers, but in the resilience and spirit of the individuals who had overcome their challenges to find a new path to health and happiness.
