Eating on a Budget

This story is about Young Adults at an adult education training facility.  Some who are homeless, have been homeless or have been incarcerated and have not been accustomed to planning their meals and making healthy choices. 

One of the facilitators of this program, and the assistant from the Supplemental Nutrition Assistant Program, at the Jefferson County Cooperative Extension Service collaborated on meeting every other Monday, Tuesday and Friday at this facility to teach nutrition. The clients were taught about eating better on a budget, planning meals, proper handwashing, and other healthy choices curriculum. The clients participated in a plan of action for meal planning and budgeting for a week, which did not include fast foods or unhealthy snacks. 

At the conclusion of the program, the exit survey shows that the Goodwill class, had an 85% success rate, showing improvements in cooking dinner at home, comparing food prices, planning meals before shopping, looking in refrigerator or cupboard before shopping, or making a list before shopping. The clients shared how much they saved and were eating healthier meals. After the lesson the clients received a certificate of completion and a bag of reinforcements that they could use at home preparing their meals.
