Planning Unit: Meade County CES

Major Program: Food Preparation and Preservation

Plan of Work: Improved Physical and Mental Health

Outcome: Initial Outcome

As more people prepare meals at home, the request for food preparation and information on foods basics has increased.  One of the common questions evolves around adding flavor to food and reducing sodium.  This has long been a focus for Extension FCS but formal information had not been compiled until Savor the Flavor was introduced to extension FCS professionals'   Using the materials, the FCS agent offered a two part series to Meade County residents. To accommodate schedules both a day and a evening class was offered.  The first class in the series focused on herbs and spices.  Participants received a handout and viewed a power point presentation and instruction focusing on origin, uses and type of flavor.  The second class in the series focused on oils and vinegars and followed the same format as the first class but at the end, the participants prepared foods incorporating what they had learned in the class.

Each class was full with 15 participants each with a waiting list.  During each session, a pre and post test was conducted.  Each class was a success -100% of the participants indicated they are wiling to try new types of cooking oil or flavored vinegar to add flavor when cooking and to try different types of herbs or spices to add flavor and reduce salt.  Each person indicated they found the information timely and helpful.  One participant commented " Hands on practical experience makes me more confident to actually try on my own."  Another commented they are learning healthier ways to cook using a variety of oils, vinegar, herbs and spices.
