According to Kids Count 2017, 24.7% of children live in food insecure households.  Children need to be taught how to make their food stretch across a time frame and understand the importance nutrition plays in their health.  In the spring of 2023 the Lewis County Family and Consumer Science Agent along with the program assistant planned a lesson with the 5 Head start Classes in Lewis County.  The book Blueberries for Sal by Robert McCloskey was read to the students and a recipe for Blueberry Muffins was made for each student.  The ingredients were discussed and how healthy choices could be made.   The children learned that the splashes of purple were the blueberries in the muffins.  The children listened to the story and were encouraged to try the muffins at the end.  68 out of the 71 children liked the muffins by trying them and giving them a thumbs up.    The students said they would try them again.
