Thirty-one percent of individuals within Ohio County are considered obese. Obesity is associated with an increased risk for chronic diseases, including heart disease, stroke, diabetes, and some cancers. The Ohio County Extension Agent for Family and Consumer Sciences taught a series of charcuterie board classes at the Extension Office and Ohio County Senior Center to make healthy eating exciting. The classes centered around MyPlate. MyPlate is the current nutrition guide published by the United States Department of Agriculture's Center for Nutrition Policy and Promotion. It serves as a recommendation based on the Dietary Guidelines for Americans.

Data collected from the charcuterie board MyPlate classes indicated that 92% of participants would consider using the MyPlate recommendations when making food choices. Another 98% said they learned how to shop for lean protein at the grocery store. Ninety-two percent of individuals became more aware of safe food handling practices, like not leaving food at room temperature for more than 2 hours, and 98%  now understood the need for food safety when serving foods on a charcuterie board.
