According to the 2020 Census Report for Magoffin County Kentucky 47% of the county’s youth live in poverty.  The Nutrition Education Program Assistant Senior works with the Magoffin County public school system to teach school age children about healthy eating habits.  The Nutrition Education Program Assistant Senior uses the Literacy, Eating, and Activity for Primary Youth Health (LEAP) to educate the elementary level Children on Health and Nutrition. With the LEAP curriculum the Nutrition Education Program Assistant Senior will read a book with a nutritional component and after discussing the meaning behind the book and how it can be used for their families’ daily lives.  The Nutrition Education Program Assistant Senior will do a food demonstration or an activity with the students. This reinforces the teaching behind the book.
The Nutrition Education Program Assistant Senior present the book One Bean a book about children growing a bean and taking them threw the steps of how the bean grew into something they could eat. The follow up activity was a living necklace they kids could wear around their necks for a week and after the week they could do the same thing the kids in the book did and grow their own bean.  The Nutrition Education Program Assistant Senior never dreamed anything would come form the activity.  However, as a result when the Nutrition Education Program Assistant Senior returned to present the next book and activity one young lady raised up her hand to talked about how she indeed planted her bean in the family garden and was watching it grow waiting tell she could harvest her beans and eat them. This was a small success but a big accomplishment for the young lady who has now learned how to help improve the poverty in her community in the future.
