Food insecurity issues have caused many people to want to become more self sufficient in regards supplying food for their households.  Chickens are a good source of protein and can be produced and handled without large investments in machinery and equipment.  The ANR agent conducted a chicken processing workshop on May 14, 2022.  Humane slaughter, scalding, plucking, and gutting was demonstrated by the agent.  Afterwards each participant slaughtered and processed a chicken of their own with the agent's supervision.  The agent broke down one of the processed chickens into its various parts for cooking.  This was done as well by the participants with the agents supervision.  After cleanup at the end of the workshop, all participants enjoyed a meal of chicken and sides prepared by the EFNEP assistant.  The chicken was prepared according to NEP approved recipes. In all, twenty people gained knowledge of how to slaughter, scald, pluck, gut, break down, and cook their own chickens.
