Beginning Canning 101

In December, this Family and Consumer Sciences Agent offered a Beginning Canning 101 class designed for those clients who had never canned foods before. Three clients expressed major concerns and fears when it came to home preserving foods.  They had watched many you tube videos and were not comfortable at all with using either a boiling water canner or a pressure canner. During these first class, participants increased their knowledge of how to safely can food -- which foods in which canner, basic equipment needed, etc. Particpants suggested meeting monthly and having a more indepth, "hands-on" canning class. They selected the foods to can for the first few months and agreed to meet back the next month.  Since then, this group has continued to meet monthly and to learn to safely preserve foods that they plan to grow in their own gardens.  The plan is that they will then feel comfortable canning those foods by themselves in their own homes.  So far, the number of participants continues to increase and the participants' confidence levels in using a boiling water canner so far increases in each class.  They are remembering what they need to do and how to execute those skills in class. They are no longer afraid to use the boiling water canner which has been our focus so far in our monthly classes. As we move towards using the pressure canner next, I am sure they will also master those skills as well.
