Senior Learns Meal Planning for One or Two People

This year, the Floyd County Cooperative Extension Office Supplemental Nutrition Assistance Program partnered with the Betsy Layne Senior Citizens Center. The Healthy Choices for Every Body curriculum was used. Out of all the topics that had been previously done here, one particular lesson stood out to the attending adults. This lesson was “Meal Planning for Every Body”. The lesson focuses on the importance of preparing nutritious meals, while also maintaining a budget. There is a specific section that serves as a guide to help one learn to shop and prepare meals for just one or two people. It offers a guideline for a healthy eating pattern, shopping tips, how much food to buy per person, how to adjust recipes, how to properly store potential leftovers, and even a number of nutritious recipes specifically aimed at households with only one or two people.

Most of the attendants there either lived alone or just with one other person, so they were really engaged and had had a lot of conversation surrounding this lesson. One woman stated that her husband had passed away years ago, and since she has been living by herself, she lost interest in cooking altogether. She then went on to say that attending these nutrition classes and partaking in the food demonstrations/sampling had inspired her to start cooking again. Specifically with this lesson, she was very happy to have recipe guides to follow now, for her singular household. She said “I don’t know why I ever got out of cooking. I always did enjoy it. You have helped me to realize how easy it is to whip up something good and good for you. I can’t wait to try some more of these recipes.”.
