Healthy Choices Making a Difference with Vegetables

According to 2016 data from the Centers for Disease Control and Prevention, only 24.9 percent of adults in Kentucky reported consuming vegetables less than one time daily. The Clay County Cooperative Extension Service SNAP-Ed (Supplemental Nutrition Assistance Program Education) assistant for SNAP eligible individuals using the Healthy Choices for Every Body curriculum created a Facebook group for individuals in Clay County to access the program due to COVID restrictions.

There were seven participants ranging in age from you to adults to seniors. The group increased consuming vegetables more often each day by 71 percent. The participant shared how they never knew the importance of consuming different vegetables.
