One of the great ways Kentucky State University (KYSU) is able to provide services to enhance community development is through nutrition education centered on changing unhealthy eating behaviors/ habits. Through the Cooperative Extension program and the federally funded grant Expanded Food and Nutrition Education Program (EFNEP), KYSU provides low-income families and youth with nutrition education to combat food insecurity and nutrition-related health challenges. Extension Assistant Jhamicah Harbut helps in this effort by conducting nutrition education classes in Fayette County.
During the pandemic, Ms. Harbut conducted virtual learning series with Family Care Center parent education group. PowerPoint presentations from the University of Kentucky‘s “Healthy Choices for Everybody” curriculum were used to conduct class. A few Lessons that were taught were “Eating better on a budget” and “Feeding Every little Body”. On average 9 students participated in hybrid programing (Zoom and or in person) twice a week from July 7, 2021 until July 23, 2021. Ms. Harbut taught students the importance of preparing and eating healthy meals through food demonstration. As. Ms. Harbut coached students, they were able to make at home tasty recipes like Easy fruit salad, a Yogurt fruit smoothie and fantastic French toast. When asked, did you like recipes made, students gave thumbs up most of the time.
