Following the lesson, there was a 100% increase in knowledge pertaining to understanding the benefits phytonutrients have in negating the detrimental effects of environmental pollution. Participants were asked to answer a question regarding which food contains the highest levels of mercury, which they all answered correctly at the end of the program. Furthermore, there was a 90% increase among participants pertaining to their willingness to consume more fruits and vegetables in order to increase their phytonutrient intake by decreasing the grilled foods to limit exposure to toxic substances.
Since completing this lesson, participants have been referred to the next session of the Body Balance program to help support their healthy behavior changes (or increase in nutrition knowledge.
