Feeding our Kentucky Families thru Covid-19

Author: Cathy Fellows

Planning Unit: Boone County CES

Major Program: Nutrition and Food Systems General

Outcome: Initial Outcome

In 2019 37 million people in the United States were struggling with food insecurities. It is

projected in 2020 to increase by 46% due to Covid-19. By the end of 2020, 54 million

Americans will have struggled with food insecurities, 1 in 7 Kentuckians. In May 2020 the

USDA began the Covid-19 Food Assistance Program. Which provides $3 billion in fresh

produce, meat and dairy once a month to be distributed locally to food banks and other

non-profits in every County in Kentucky. These 20-25lb boxes would supply enough food to

provide adequate meals in a household for a month.

In collaboration with Director Amy Heyd of the Freestore Food Bank, The University of

Kentucky’s Northern Kentucky Nutrition Education Program Assistants began providing

monthly 400+ Nutrition/Health information packets that were sent home with the Covid-19

Food Assistance boxes. These boxes were distributed monthly at Immanuel United

Methodist Food Pantry-Boone Campus since the program began in May 2020.

The information provided was to help educate the participants on the latest Covid-19

information as well as provide Nutrition information and low cost healthy recipes to use

with products in the Covid-19 Food Assistance boxes they received.
