~~•Through ongoing community needs discussions with local leadership, the lack of accessibility to healthy food continues to be identified in Breckinridge County. With limited resources, transportation to grocery stores and funds for purchasing food is difficult at times for many families. To help address this need, the Extension Service is offering basic food preparation workshops. Basic Cooking 101 began in 2017 and is continuing on in the 2018 program year with monthly sessions covering knife skills, measuring, baking, food preservation, meal prep and freezer meals. The series is structured with a collaboration between the FCS Agent and SNAP Assistant utilizing the Healthy Choices for Every Body, Super Star Chef and Plate It Up! Ky Proud program materials. The two-hour classes are split into a nutrition lesson and a hand-on cooking lab. Participants have reported learning new cooking skills and understanding the importance of correct measuring in order to get consistent results in cooking. Also an increased awareness for food safety and healthy food choices has been expressed. With the purchase of the mobile cooking equipment through a FCS grant, the classes will be offered in the McDaniels and Custer communities in an attempt to reach underserved families.
