Healthy Choices for Fallsburg Families

The Lawrence County Extension Expanded Food and Nutrition Education Program (EFNEP) Assistant Senior partnered with Fallsburg Elementary Family Resource Youth Service Coordinator to conduct educational classes for families served by the Family Resource Center. The classes were designed to provide families with nutritional information and resources to help them make healthier food choices. 

A total of nine (9) parents participated in program using the Healthy Choices for Everybody curriculum. This program consisted of seven (7) lessons which included, but were not limited to the following: MyPlate, Breakfast, Know the Limits, Meal Planning, Reading Labels, and Food Safety. As a result, 100% of participants showed improvement in one or more diet quality indicators and 89% showed improvement in physical activity. In addition, 89% of participants showed improvement in one or more food safety practices (i.e., washing hands before preparing food, washing all items and surfaces after cutting raw meat, thawing frozen food properly, or using a meat thermometer) and 89% showed improvement in food resource management practices (i.e., cook dinner at home, compare food prices, plan meals before shopping, look in refrigerator or cupboard and making a list before shopping).
