Herbs? Are they the New Salt?

For many years herbs and spices have been used for medicinal purposes, but in more recent years they have been valued for their ability to add flavor to a dish while reducing the amount of salt.  According to the CDC, Hypertension, otherwise known as high blood pressure, increases the risk of heart disease and stroke.  Reducing the amount of sodium intake can greatly improve blood pressure numbers in those suffering from Hypertension.  In an effort to lower salt intake among participants, a webinar on growing and cooking with herbs was presented in partnership between the Lyon County Family and Consumer Sciences agent and the Lyon County Agriculture and Natural Resources agent.  The program offered a variety of information on planting and raising herbs that grow well in Western Kentucky as well as information on which herbs pair well with certain foods, the shelf life of herbs, and the difference in using dried versus fresh herbs.  In a three week follow-up, participants were able to identify herbs they wanted to grow this summer as well as apply the knowledge gained about growing herbs by planting them at their own homes.  Participants reported planting basil, rosemary, mint, marjoram, oregano, thyme, chives, parsley, dill and sage.  75% of the participants reported never having grown herbs, but after the webinar reported they would like to try.  Follow-up questionnaires from participants gained pictures of newly planted herb gardens.
