A local Rehabilitation Center “Grace Place” and the Expanded Nutrition Education Program teamed up to work with clients on improving their nutritional habits and building a better life style. There was a average of eleven women that attended this class. Based on class discussion and the information gathered from the participant food recall, low fat options were not part of their daily dietary intake because the grocery shopping was an assigned chore, not a personal option.
The Expanded Food Nutrition Education assistant invited the meal planner/grocery shopper for each week to join the classes. Nutrition Education Curriculum was chosen. Lessons were given on, Dairy For Every Body, My Plate, and Reading Labels. Each lesson gave information on using the nutritional labels to help make appropriate choices and add low fat to your everyday eating habits. By the end of the four week classes and giving a second recall, seventy five (75%) of the group are now using low fat options.
