Curing Country Hams

The 4-H Country Ham Project has become a multi-generational, countywide educational activity sponsored by the Henry County Cooperative Extension Service.  While youth participated in the ham project for over 15 years, it has only become a multi-generational event within the past 6 years.  This occurred with the construction of a county ham house.  The ages ranging of those who participated were between the ages of 5 to 80.  The 4-H aged youth take part in the educational component taught by a livestock volunteer.  Many of the adults choose to sit in on this session as well. Former 4-Her’s as well as teens that have been a part of the country ham program for years serve as volunteers.  They put their knowledge and leadership skills to good use in helping those who have less experience.  There were over 80 people in attendance and at one point there were three generations working side by side.

Within a few short hours there were 70 hams hanging ready to begin the curing process.  This past year Henry County was proud to take 18 hams to the Kentucky State Fair with all but two receiving blue ribbons.  We also had the Overall Junior winner as well as a ham class champion.
