Salsa Canning Class Teaches Safe Canning Practices

The 2019 growing season proved to be highly successful for individuals in the Lewis County area who planted tomatoes- so successful that many individuals began to wonder what to do with the produce. Salsa naturally seemed like a great solution, however it is well known that if proper canning practices are not followed it can turn dangerous or even deadly for those who consume it. It is very important that individuals learn safe canning methods and process their canned goods for proper times and temperatures to ensure that harmful bacteria doesn't make the product its home.

In response to a growing need for a solution, the Lewis County Extension Office hosted a one day salsa canning workshop on August 20, 2019. Approximately 10 individuals participated in the workshop and its participants ranged from 12 to 73 in age and included both males and females. During the class participants were able to make a traditional salsa, salsa verde, and a peach salsa. The variety helped to ensure that every individual learned something new- even those that felt they were well rehearsed in salsa making prior to attended the workshop. Individuals were also able to learn about the importance of sanitizing jars, of wiping the jar rims before placing the lid, and how to properly use a water bath canner. Nearly all of the participants claimed that they had never used a water bath canner prior to the workshop.

By the end of the workshop nearly 15 pints of salsa were processed and other unprocessed jars were taken home to be eaten immediately. All individuals in the class claimed they learned something new from the class and that they intended to use the information learned in class in their own homes.
