The Madison County Cooperative Extension Service Expanded Food and Nutrition Education Program Assistant in collaboration with the B. Michael Caudill Middle School Resource Center Director offered an afterschool cooking club. Nutrition lessons were taught with an emphasis on trying new foods such as humus with fresh vegetables which was a huge hit. A whole grain lesson was taught allowing each student to make their own loaf of whole wheat bread. As a result eighty three percent of students improved their intake of whole grain foods and improved in food preparation and food safety practices. To show off their newfound skills students could invite two family members to a dinner which participants prepared.
