A program using the Healthy Choices for Every Body curriculum was implemented at the Lincoln County Senior Citizens Center. This is a very large group which meets several times a week for different activities at the center. The Healthy Choices class provided not only good nutrition information, but also provided another opportunity for the seniors to interact and socialize, which they greatly enjoy doing with each other. Most of the folks in this group are on a fixed income and expressed trouble at the beginning with resource management, specifically with shopping for only one or two people. Many of them were accustomed to shopping for larger families, and stated that it was hard now learning to scale back and avoid waste. Meal planning and creating shopping lists, as well recipes specifically geared toward one or two people were topics really focused on with this group. The folks showed great improvement in these and many other areas throughout the course of the class.
All 26 participants showed improvement in at least one or more diet quality indicators. Some of these improvements included eating more fruits and vegetables throughout the day, drinking less regular soda and other sugary drinks and cooking dinner at home more often. For example, 65% of the group indicated eating more red and orange vegetables each week. 85% of participants reported exercising more frequently for at least 30 minutes a day. Lastly, 92% of participants showed improvement in food resource management. 54% reported cooking dinner at home more often throughout the week, and 65% reported planning meals before shopping more often.
