Healthy Improvements at Stanford Baptist Church

In the spring of 2019, a program was held by the NEP Assistant from the Lincoln County Extension Office at the Christian Life Center at Stanford Baptist Church to help improve nutrition and resource management. Advertisement was conducted at Fort Logan Cooperative Ministries, which is a food bank right next to the church.  Many of the participants of the program were those recruited from advertising at the food bank.  The class was 7 lessons long, meeting every week at the church and using the Healthy Choices for Every Body curriculum.  The class was very productive and yielded numerous positive results.  This group was extremely engaging and interactive throughout the class.  One participant shared about her doctor’s excitement that her cholesterol was lower than it had been in years since she began the class and learned more heart healthy recipes. 

Participants of this program showed improvement in diet quality, physical activity, food safety, food security and resource management. For diet quality, 100% of the participants showed improvement in at least one or more areas.  In particular, 67% eat more fruit each day and 89% eat more vegetables each day. 89% of the participants showed improvement in getting more physical activity each day and 78% showed improvement in food safety.  Because many of these participants are on a limited income and must rely on community resources to have enough to eat, a big priority was helping to improve food security and resource management.  67% (6 of 9) of participants showed improvement in one or more food security indicators, and 78% (7 of 9) of participants showed improvement in one or more food resource management practices. Again, this group was a pleasure to teach and to see improve over the course of the 7 weeks.
