The nation has a homeschool percentage rate of 3.3 %; while the Kentucky homeschool rate has raised above the national average to a 3.6 percent. It is believed that the percentage will likely become higher due to enrollment rising in the state. The issue at hand is that most home school groups do not get the opportunity to have guest speakers come into their classrooms which can make them an unreached audience to the Nutrition Education Program. In Logan County the Supplement Nutrition Assistance Program Educator was approached by a homeschool family to teach nutrition lessons to their students.
The Nutrition Education Program at the University of Kentucky has equipped their nutrition assistants throughout the state with various curriculums to use to teach nutrition lessons. The curriculum used by the Logan County Supplement Nutrition Assistance Program Educator was Teen Cuisine. The group of students consisted of three students in various grade levels. During the nutrition lessons students gained knowledge on food safety, knife skills, basic nutrition concepts and hands on experience in the kitchen. Students completed activities including cutting onions, apples and handling raw meat. At the beginning of class students set goals to achieve by the end of class. Students achieved goals set by working hands on in the kitchen completing food demonstrations, reading recipes, and modifying recipes to make them healthier.
By completing the class the students improved in the following areas:
* 33 % in diet quality by eating healthier foods
* 100 % in food safety and handling techniques
* 67 %improvement in adding more physical activity
Students discussed how much they loved the class and loved having a guest speaker come to their classroom to talk to them.
