Nutrition and Cooking Class Inspires Rehabilitation Clients

The Journal of the American Dietetic Association reported “Findings support the position that nutrition education is an essential component of substance abuse treatment programs and can enhance substance abuse treatment outcomes.” The Healthy Choices for Everybody curriculum was implemented at The Healing Place women’s’ facility by a SNAP-Ed assistant with the University of Kentucky Cooperative Extension Nutrition Education Program. Participants in the program are able to try new recipes and foods that they may have never otherwise tried before the class. One participant recreated the recipes each week for her roommates, and they always left raving reviews. Some of the recipes included pineapple fried rice, banana “ice cream”, seasonal fruit crisp, and Hawaiian pizza with spinach. After completion of the program, 67% of participants reported consuming dark green vegetables twice a week. The Healthy Choices class is a helpful program for participants recovering from drug and alcohol use as they transition out of the inpatient facility to become healthy, successful individuals.
