Elliott County FCS has been hosting an annual cooking school for eleven years. The agent often gets questions such as "Why are people vegetarian" or what does "Vegan" mean? Participants at Diabetes and other nutrition programs often ask about protein in vegetarian diets. One of Elliott County FCS's most active volunteers became a vegetarian because of health issues. She got lots of questions. For these reasons the Partnership for a Healthy Elliott County chose "Eating as a Vegetarian" as the theme for the cooking school. Twenty-two participants completed the program. The first night was taught by the volunteer who became vegetarian because of health issues. She told the story of her health and why she chose to eat a vegetarian diet. She brought several items used in vegetarian foods that are unfamiliar in our area such as Nutritional Yeast and Tofu. Over the two nights, twelve recipes were prepared. The recipes were evaluated by the group as to what nutritional value each had. All twenty-two participants reported understanding the vegan and vegetarian diets and everyone said they would prepare at least one of the recipes for their families.
