Healthy Eating using the Electric Pressure Cooker

Clark County Activity Coalition implemented a county wide Wellness Challenge to incentivize Clark County residents to increase health and wellness in 2019. The Clark County Cooperative Extension Service partnered with the Activity Coalition to provide education classes on healthy eating. Previous surveys conducted by the Family & Consumer Sciences Agent indicated a desire from survey participants to learn more about healthy eating usin an electric pressure cooker. To meet this need, classes were offered during the 10 week Wellness Challenge on how to use an electric pressure cooker to make healthy recipes at home.


The classes were offered to the over 400 participants in the Wellness Challenge, all of whom were Clark County residents. There were 66 people who participated in these classes offered during the Challenge. The classes provided hands demonstration of meal prep and recipe tastings. The objective of the class was to learn how an electric pressure cooker worked and how to make nutritious meals. Three different methods of cooking with the electric pressure cooker were used and 4 recipes were made.


Post evaluation data indicated that over 95% of participants stated they learned how the electric pressure cooker worked for making healthy meals. 90% of participants reported they plan to use their electric pressure cooker to make nutritious meals.  Participants reported benefiting from ‘hands on demonstrations’ and ‘providing the recipes’ to increase their ability to make healthy meals in the electric pressure cooker.
