According to the United States Census Bureau, the median household income in 2017 in Floyd County, KY was $31,196. The per-capita income was $18,366 with 32% of persons below the poverty line. Food insecurity has been a rising and continued issue in Floyd County. In 2017, Feeding America claimed that 7,150 individuals in Floyd County were food insecure.
In partnership with the Floyd County Health Department, the Floyd County Family & Consumer Science Program offered the Cook Together, Eat Together program at the St. James Church in Prestonsburg, KY. St. James is also a local food pantry and soup kitchen. The food pantry and soup kitchen are open weekly on Tuesdays to provide families and individuals with food supplies and a warm meal.
This was a three-week series consisting of basic nutrition information, budgeting, growing your own food and basic cooking skills and safety provided by both the Floyd County Health Department and the Family & Consumer Science program. Each week, there would be a lesson and recipe from the Cook Together, Eat Together cookbook. Recipes were accommodated to what the food pantry had available so they were able to share the printable recipes with their clientele to fix at home. This helped give their clientele ideas on how to prepare the food they are given.
A total of 10 individuals attended the program. The individuals that attended worked at the church, volunteered at the church, and were clientele of the food pantry. As a result of the program 100% of the individuals claimed that they gained proper food safety and skills, learned basic budgeting and nutrition information, and were confident in accommodating recipes to what they had available. This program also sparked interest in future Family & Consumer Sciences programming.
