Two point five is the average number of persons living in a household in Kentucky. Over the last twenty years the number of persons living in a one or two person household has increased from 56% to 62% of households in the US. As the number of persons in a household affect how much food is needed to be prepared, it is only logical that when regular recipes and pan sizes are used to prepare food, the consumers find it easy to over consume and also have large portions of food discarded when not consumed. Hence, the lesson on Baking for one or two was received very well in the Ft. Harrod Area.
Topics during the lesson covered issues such as pan sizes, equipment, space, convenience, time management, ingredient substitutions, division of recipes, and portion control. This Family & Consumer Science Agent taught this lesson in eight central KY counties as part of the Extension Homemaker chosen lessons for 2018-19 program year. Sixty seven participants returned evaluations and reported the following: 81% reported reducing recipes or planning to do so to serve one or two; 94% planned to reduce the amount of solid fats or added sugars in their diet; 73% planned to bake smaller yield recipes; 45% of participants agreed they learned new info about reducing amounts in recipes and how to do this.
New information was gained by participants at each of the eight sessions including information about pan sizes, how to measure pan amounts, new equipment in the marketplace, placing water in unused portions of muffin tins, only to use one beater in mixer for smaller bowls and smaller amounts, aquafaba from beans as a substitute for eggs, or wax paper in bottom of baking pan to prevent sticking. As one homemaker exclaimed, "i've been a homemaker for over 50 years and I learned something new today!"
